My Birthday Carrot Cake with Chocolate Frosting: Delicious and Decorated with Flowers

If you came here from my previous post, you probably saw the birthday cakes I made for my celebration – a simple lunch that turned into a cozy afternoon coffee moment, filled with warmth, good conversation, and homemade flavors.

That day, two cakes stole the spotlight… and this was one of them.

Soft, moist, and rich – this is the kind of cake that pleases everyone. The kind people go back for a second slice without even thinking twice.

Now, as promised, here’s the full recipe so you can recreate it at home.

Why You’ll Love This Cake

This isn’t just any carrot cake. It’s:

  • Incredibly moist and fluffy
  • Made with simple pantry ingredients
  • Topped with a rich, glossy chocolate glaze
  • Perfect for birthdays, gatherings, or a cozy afternoon with coffee

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 large carrots (or 3 medium carrots)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

Instructions

1. Blend the wet ingredients
In a blender, combine the carrots, eggs, oil, and sugar. Blend until smooth and creamy.

2. Mix the batter
Pour the mixture into a large bowl and add the flour. Stir well until fully combined.

3. Add the baking powder
Gently mix in the baking powder until incorporated.

4. Bake
Pour the batter into a greased and floured pan. Bake in a preheated oven at 350°F (180°C) for about 35–40 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool and remove from pan
Let the cake cool slightly, then remove from the pan.

Chocolate Glaze (Brazilian-Style)

This is what takes the cake to the next level – a rich, fudgy chocolate topping that melts slightly into the cake and creates that irresistible finish.

Ingredients

  • 1 can sweetened condensed milk
  • 3 tablespoons cocoa powder
  • 2 tablespoons butter

Instructions

In a saucepan, combine the sweetened condensed milk, cocoa powder, and butter.

Cook over medium heat, stirring constantly to prevent sticking.

Continue stirring until the mixture thickens slightly and starts to pull away from the bottom of the pan.

Remove from heat and pour over the cake while still warm for a smooth, glossy finish.

Final Touch and Decoration with Flowers

Pour the chocolate glaze over the cake while it’s still slightly warm. This helps it settle beautifully over the surface and soak in just enough to create that perfect, rich texture.

To decorate the cake, I chose these beautiful mini roses that immediately caught my attention – their color was simply perfect and added such a delicate, elegant touch.

After the chocolate frosting had cooled and set, I carefully trimmed the stems and gently arranged the flowers on top of the cake, letting them cascade slightly to one side. It was a simple detail, but it completely transformed the cake into something truly special and celebration-worthy.

A Simple Cake That Feels Special

This is exactly the kind of recipe I love: simple to make, but with a result that feels truly special.

It was one of the highlights of my birthday table, and honestly… it might just become a tradition.
